Simple, Elegant Steelhead Crudo
This delicious Steelhead Trout Crudo is perfect for a light, refreshing meal or a sophisticated appetizer. Adorn your steelhead with a zesty citrus and vinegar marinade, fresh crunchy snap peas, and a hint of herbal brightness.

Ingredients:
- 0.5 lb steelhead trout fillet, skin removed
- 1 lemon and zest
- Vinegar (We used Brightland’s champagne vinegar and blueberry balsamic vinegar)
- 1 shallot
- A handful of snap peas
- 1 teaspoon soy sauce
- Salt
- Black pepper
- Sugar
Instructions:
- Season the Trout:
- Sprinkle the fillet with salt, pepper, sugar, and oil.
- Massage the seasonings into the fillet and place it in a bowl or pan.
- Add Shallots:
- Finely slice the shallot and sprinkle over the trout.
- Prepare the Marinade:
- Whisk together the vinegars and soy sauce.
- Pour the mixture over the trout, adding whole peppercorns and two strips of lemon peel.
- Marinate:
- Let the trout marinate for 20-30 minutes to allow the flavors to meld.
- Prepare Garnishes:
- Julienne the snap peas.
- Slice and Plate:
- Thinly slice the marinated trout.
- Arrange on a plate with the marinade, pickled shallots, julienned snap peas, and a herb garnish (We used broccoli rabe flowers).
