Crispy Steelhead Trout Croquettes
The Hudson Valley Fisheries team presents a creative recipe starring our ground trout! These crispy Steelhead Trout Croquettes are perfect as a snack, appetizer, or main dish. They’re packed with flavor and sure to impress.

Ingredients:
- 1 lb fresh ground steelhead trout
- 4 slices of stale bread
- 1 egg
- 1 cup of milk
- 1 lemon
- 1 shallot
- Fresh ginger (to taste)
- 1 sprig of mint
- Sesame seeds
- Parmesan cheese (to taste)
- Salt & pepper
- Flour (gluten-free flour works) for rolling the croquettes
Garnish:
- Mayo
- Tomatoes
- Arugula
- Pickled shallots
Instructions:
- Prepare the Bread:
- Tear the stale bread into small pieces.
- Soak the bread in milk until soft, then squeeze out the excess milk.
- Mix the Croquette Base:
- In a large bowl, combine the soaked bread, ground steelhead trout, egg, finely chopped shallot, grated ginger, chopped mint, sesame seeds, grated Parmesan cheese, salt, and pepper.
- Mix until well combined.
- Form the Croquettes:
- Take a handful of the mixture and shape it into small balls or patties.
- Roll each croquette in flour until fully coated.
- Cook the Croquettes:
- Heat oil in a frying pan over medium heat.
- Fry the croquettes until golden brown and crispy on all sides, about 3-4 minutes per side.
- Remove and drain on paper towels.
- Prepare the Garnishes:
- Slice the tomatoes and arrange on a plate with arugula.
- Add a dollop of mayo and some pickled shallots.
- Serve:
- Plate the croquettes with the garnishes and a wedge of lemon on the side.
