Cedar Grilled Trout
Time: 25 minutes
Servings: 4-6
Ingredients
- 2 x 1lb Steelhead fillets
- 1 tbsp cracked pepper
- 1 tbsp herbed salt
- 1 tbsp olive oil
- 1 cedar plank
- 4 lemon wedges
Instructions:
- Soak cedar planks in warm water for 15 minutes
- Preheat grill to medium heat (~400 degrees F)
- Remove planks from water and place steelhead fillets skin-side down on top - 1 fillet per plank
- Mix mustard cracked pepper and herbed salt. Lightly coat flesh of both fillets
- Drizzle olive oil on both fillets
- Place cedar planks directly on grill and cook for 15 minutes
- Let fillets rest for 10 minutes
- Finish with sprinkle of salt and serve with lemon wedges
- Pairs well with a horseradish aioli sauce
